Emily Bakes: Mexican Chocolate Chocolate Chip Cookies

Once upon a time, Emily found Ibarra Mexican chocolate in the grocery store and thought to herself, “Wow! Mexican chocolate! Sounds exotic and luxurious and I must get it NOW!!”  Unfortunately, after buying this chocolate and researching online, she discovered the chocolate was not at all like normal chocolate…its sugar crystals provide a noticeable crunchy texture to the chocolate.  What would she do with this strange crunchy chocolate??? Alas, the chocolate got forgotten in the pantry, neglected for weeks, then months, and soon, years.

But no worries, this story has a happy ending.  Even when it’s chocolate that you don’t know what to do with at first… in the end, it’s still chocolate!!  Chop it up, stick it in a great cookie dough (thanks Sherry Yard!), and, well, next thing you know, you are wondering why you were ever scared of using the chocolate in the first place.  Try these out, and if you are scared that you might miss the gooey, melty nature of normal chocolate as I had, then try first using half Mexican chocolate and half with normal bittersweet or semisweet chocolate.  But, I promise, the Mexican chocolate is not too sweet, with a not too strong but still full of great cinnamon flavor.  The crunchy gritty texture of the chocolate might sound weird to have in a cookie, but actually, it gives the usual chocolate chip cookie a fun element of surprise.  The rest of my Mexican chocolate stock won’t have to wait around in my pantry for much longer now!
