Coming from the mid west and being fortunate enough to have been exposed to a large Ukrainian community, I was always in awe of how a European family could make something out of nearly nothing. I believe we in Canada are entirely blessed to have this cultural mosaic that envelopes us and teaches us about different cultures and teaches us how to cook and appreciate foods from literally everywhere.

I lived next door to a Ukrainian couple. The wife is probably the most amazing cook I've ever met, as well as a seamstress, incredible gardener, homemaker, mother, wife and the lead of a Ukrainian dance group AND sewed all the costumes to boot. Take a look at these costumes in the Rusalka Ukrainian Dance Ensemble video. They're one of the premier Ukrainian dance ensembles in Canada. How great is this?





I learned to love the food (the smell would waft across the driveway and through my kitchen window and often I could almost feel myself being airlifted straight to their kitchen). One of the many dishes that I used to look forward to and was held as the greatest secret was the Beet Leaf Holopchi that she made each spring when the tender beet leaves grew.

I hunted and hunted to find a "good" recipe and finally found something in a ladies' club cookbook called the Keld Community Ladies Club in Ashville, Manitoba. The last publishing of this cookbook was 1976 and I doubt it's even in circulation anymore. I don't have a clue where Ashville is but I'm glad to have the cookbook and I'm sure it's a lot better than getting the tee...
